Recipe Wednesday: Thanksgiving Pumpkin Rice + 7 Ways to Give Back as a Family

Pairing Twin Cities Outings with Recipes at Home

Or perhaps you’ve stockpiled a stash of seeds from all those jack-o-lanterns you carved last week and are wondering what to do with them. Well, Dining With Alice has a great idea for you. Her pumpkin rice recipe could make a great alternative to Thanksgiving stuffing, or it could work well as a tasty fall side dish. Plus, after the recipe, since we’ve already got you in a giving thanks mood, we present 7 Ways to Give Back as a Family, part of FFTC’s We Can Give Back Month.

Ingredients:

  • 3 cups rice of choice
  • 2 cups chicken broth
  • 4 cups water
  • 3 tsp sesame oil
  • 1 tsp pumpkin pie spice
  • 1/2 cup Italian parsley chopped
  • 1/4 cup fresh thyme
  • 1 cup salted & roasted pumpkin seeds
  • 1 cup yellow raisins
  • 1 cup dried currants
  • 1 cup dried cherries

Directions:

If you own a rice cooker, combine rice, chicken broth and water. Once cooked, add the sesame oil, pumpkin pie spice, parsley, thyme, pumpkin seeds, yellow raisins, currants and cherries. If you don’t have a rice cooker, cook the rice as you normally would, then add ingredients. Makes 10 cups.

I love Gianna’s National Family Volunteer Day post because it can be difficult to figure out how to introduce and participate in volunteering when you’re factoring in small children. Here are her 7 highlights to give you some inspiration, then follow the link for the details!

  • Give (food shelves, shelters, Salvation Army, Toys for Tots, neighbors in crisis)

While our agenda here at FFTC has typically been — and will continue to be — lending inspiration for family outings around the Twin Cities, we also recognize the value in simply spending quality time at home together. “Family fun” doesn’t always have to mean “on the run”, right? This is the goal behind our new special Wednesday series. And in keeping with the original mission of FFTC to promote local, we’re partnering with businesses and personalities to provide ideas on how you can spend this time at home. Today we explore Saint Paul  ice cream shops and make homemade Ice Cream Sandwiches, with the help of Dining with Alice.
